Description

A delightful cake that captures the essence of sunny days with its zesty lemon and creamy ricotta, perfect for spring and summer gatherings.


Ingredients

  • ¾ cup unsalted butter (softened)
  • 1 ½ cups granulated sugar
  • 15 oz whole milk ricotta cheese
  • 3 large eggs
  • 1 tsp vanilla extract
  • 23 tbsp fresh lemon juice (juice from one large lemon)
  • lemon zest (zest from one large lemon)
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ cups all-purpose flour

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Grease a 9-inch springform pan using butter and a sprinkle of powdered sugar, then set aside.
  3. In a small bowl, mix the flour, baking soda, and salt; whisk together until fully combined and set aside.
  4. In the bowl of a stand mixer fitted with the paddle attachment, beat the granulated sugar and softened butter together on high speed for 2 minutes until smooth and creamy.
  5. Add the ricotta cheese and blend on high until light and fluffy, approximately 4 to 5 minutes.
  6. Add the eggs to the ricotta mixture one at a time on medium speed, scraping the bowl after each addition.
  7. Mix in the vanilla extract, lemon zest, and lemon juice until fully combined.
  8. With the mixer on low, gradually add the dry ingredients to the ricotta mixture.
  9. Pour the batter into the prepared springform pan and smooth the top.
  10. Place the cake on the middle rack of the preheated oven and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
  11. Allow the cake to cool in the pan for 15 minutes before carefully removing the springform pan and cooling completely on a wire rack.

Notes

Serve with a dollop of whipped cream and fresh berries, or simply dust with powdered sugar for an elegant touch.
