- 1 cup unsweetened white chocolate chips
- 1/2 cup coconut oil
- 1/2 cup erythritol or preferred low-carb sweetener
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
Instructions
- In a saucepan over low heat, melt the white chocolate chips and coconut oil, stirring continuously until smooth.
- Remove from heat, then add erythritol, vanilla extract, and sea salt, stirring until mixed.
- Pour the mixture into a lined baking dish and spread it evenly.
- Refrigerate for approximately 2 hours or until firm.
- Lift the fudge out using parchment paper, cut into squares, and serve.
Notes
For a fantastic low-carb treat, store leftover fudge in an airtight container in the fridge for up to two weeks.
