Ingredients

Instructions

  1. Place 6 large eggs in a saucepan, covering them with cold water. Bring to a boil over medium-high heat, cover with a lid, and remove from heat. Let them sit for 12 minutes.
  2. Transfer eggs to an ice bath to cool down quickly. After about 5 minutes, gently crack the shells under running water, making peeling easier.
  3. Halve the cooled eggs lengthwise and scoop out the yolks into a mixing bowl. Mash the yolks with 1/3 cup mayonnaise, 1 tbsp mustard, and season with salt and pepper until smooth and creamy.
  4. Use a spoon or pastry bag to fill the egg white halves with the yolk mixture.
  5. Dust the filled eggs with paprika and sprinkle with fresh herbs if desired. Arrange them on a plate, and serve chilled.
