- 6 large eggs
- 1/3 cup mayonnaise
- 1 tbsp yellow mustard
- 1 tsp paprika (plus extra for garnish)
- Salt and pepper to taste

Instructions
- Place 6 large eggs in a saucepan, covering them with cold water. Bring to a boil over medium-high heat, cover with a lid, and remove from heat. Let them sit for 12 minutes.
- Transfer eggs to an ice bath to cool down quickly. After about 5 minutes, gently crack the shells under running water, making peeling easier.
- Halve the cooled eggs lengthwise and scoop out the yolks into a mixing bowl. Mash the yolks with 1/3 cup mayonnaise, 1 tbsp mustard, and season with salt and pepper until smooth and creamy.
- Use a spoon or pastry bag to fill the egg white halves with the yolk mixture.
- Dust the filled eggs with paprika and sprinkle with fresh herbs if desired. Arrange them on a plate, and serve chilled.
Notes
