Description

Ingredients

  • 1 lb ground beef
  • 1 can chili beans
  • 1 can Rotel tomatoes
  • 1 cup corn
  • 1 cup rice
  • 1 cup shredded cheddar cheese
  • Chili Cheese Fritos, for topping
  • Sour cream, for serving

Instructions

  1. Use the sauté function on your Instant Pot to brown the ground beef for 5-7 minutes.
  2. Drain any excess fat from the pot.
  3. Add chili beans, Rotel tomatoes, corn, and rice; stir together.
  4. Pour in enough water or broth to cover the rice.
  5. Secure the lid and set to manual high pressure for 10 minutes.
  6. Allow a natural pressure release for 10 minutes, then release any remaining pressure.
  7. Stir the mixture and sprinkle with shredded cheddar cheese, covering to melt.
  8. Serve topped with Chili Cheese Fritos and a dollop of sour cream.
