Instructions
- Use the sauté function on your Instant Pot to brown the ground beef for 5-7 minutes.
- Drain any excess fat from the pot.
- Add chili beans, Rotel tomatoes, corn, and rice; stir together.
- Pour in enough water or broth to cover the rice.
- Secure the lid and set to manual high pressure for 10 minutes.
- Allow a natural pressure release for 10 minutes, then release any remaining pressure.
- Stir the mixture and sprinkle with shredded cheddar cheese, covering to melt.
- Serve topped with Chili Cheese Fritos and a dollop of sour cream.
