Description

A rich and creamy garlic Parmesan chicken dish made easily in the Instant Pot, perfect for busy weeknights or special occasions.


Ingredients

Scale
  • 1.52 lbs Boneless, Skinless Chicken Breasts (about 34 medium breasts)
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Unsalted Butter
  • 810 Cloves Garlic, minced
  • 1 teaspoon Salt (adjust to taste)
  • 1/2 teaspoon Black Pepper, freshly ground
  • 1 teaspoon Italian Seasoning
  • 1/4 teaspoon Red Pepper Flakes (optional)
  • 1 cup Low-Sodium Chicken Broth
  • 1/2 cup Heavy Cream
  • 4 oz Cream Cheese, softened and cut into cubes
  • 3/4 cup Grated Parmesan Cheese
  • 1 Tablespoon Cornstarch mixed with 2 Tablespoons Cold Water (slurry, optional)
  • 2 Tablespoons Fresh Parsley, chopped

Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Coat chicken with salt, black pepper, Italian seasoning, and optional red pepper flakes.
  3. Select the ‘Sauté’ function on the Instant Pot, add olive oil and butter, and let melt.
  4. Sear chicken for 2-3 minutes on each side until golden. Remove chicken.
  5. Add minced garlic to the pot, stirring for 30-60 seconds until fragrant.
  6. Pour in chicken broth and scrape the fond from the bottom of the pot.
  7. Return seared chicken to the pot with juices.
  8. Secure lid and set to ‘Pressure Cook’ for 10-12 minutes.
  9. Allow pressure to release naturally for 10 minutes, then vent remaining pressure.
  10. Check internal temperature of chicken (165°F); let rest.
  11. Return pot to low ‘Sauté’ mode, whisk in cream cheese until smooth.
  12. Slowly add heavy cream and Parmesan, whisk until blended and creamy.
  13. If desired, whisk in cornstarch slurry to thicken.
  14. Return chicken to pot to coat in sauce or slice and stir back in. Add parsley before serving.
  15. Plate and drizzle with extra sauce. Enjoy!

Notes

For a vegan option, substitute chicken with firm tofu and replace dairy with cashew cream and nutritional yeast.
