Description
A rich and creamy garlic Parmesan chicken dish made easily in the Instant Pot, perfect for busy weeknights or special occasions.
Ingredients

- 1.5 – 2 lbs Boneless, Skinless Chicken Breasts (about 3–4 medium breasts)
- 1 Tablespoon Olive Oil
- 1 Tablespoon Unsalted Butter
- 8–10 Cloves Garlic, minced
- 1 teaspoon Salt (adjust to taste)
- 1/2 teaspoon Black Pepper, freshly ground
- 1 teaspoon Italian Seasoning
- 1/4 teaspoon Red Pepper Flakes (optional)
- 1 cup Low-Sodium Chicken Broth
- 1/2 cup Heavy Cream
- 4 oz Cream Cheese, softened and cut into cubes
- 3/4 cup Grated Parmesan Cheese
- 1 Tablespoon Cornstarch mixed with 2 Tablespoons Cold Water (slurry, optional)
- 2 Tablespoons Fresh Parsley, chopped
Instructions
- Pat the chicken breasts dry with paper towels.
- Coat chicken with salt, black pepper, Italian seasoning, and optional red pepper flakes.
- Select the ‘Sauté’ function on the Instant Pot, add olive oil and butter, and let melt.
- Sear chicken for 2-3 minutes on each side until golden. Remove chicken.
- Add minced garlic to the pot, stirring for 30-60 seconds until fragrant.
- Pour in chicken broth and scrape the fond from the bottom of the pot.
- Return seared chicken to the pot with juices.
- Secure lid and set to ‘Pressure Cook’ for 10-12 minutes.
- Allow pressure to release naturally for 10 minutes, then vent remaining pressure.
- Check internal temperature of chicken (165°F); let rest.
- Return pot to low ‘Sauté’ mode, whisk in cream cheese until smooth.
- Slowly add heavy cream and Parmesan, whisk until blended and creamy.
- If desired, whisk in cornstarch slurry to thicken.
- Return chicken to pot to coat in sauce or slice and stir back in. Add parsley before serving.
- Plate and drizzle with extra sauce. Enjoy!
Notes
For a vegan option, substitute chicken with firm tofu and replace dairy with cashew cream and nutritional yeast.
