Description

A comforting and savory dish that brings together ground beef, rice, and creamy cheese in a quick and easy Instant Pot meal.


Ingredients

  • 1 lb ground beef
  • 1 cup rice
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 bell pepper, chopped
  • 1 cup shredded cheese
  • 2 cups beef broth
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode and add the ground beef. Cook until browned and fully cooked through.
  2. Drain any excess grease.
  3. Add the rice, diced tomatoes, corn, bell pepper, beef broth, onion powder, garlic powder, salt, and pepper to the pot. Stir well to combine.
  4. Secure the lid and set the Instant Pot to pressure cook on high for 8 minutes.
  5. After cooking, allow for a natural release for 5 minutes, then quickly release any remaining pressure.
  6. Open the lid and stir in the shredded cheese until melted. Serve warm.

Notes

For a vegetarian version, swap the ground beef for lentils. Experiment with different cheeses for varied flavors.
