- 1 lb ground beef
- 1 cup rice
- 1 can diced tomatoes
- 1 cup corn
- 1 bell pepper, chopped
- 1 cup shredded cheese
- 2 cups beef broth
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Set the Instant Pot to sauté mode and add the ground beef. Cook until browned and fully cooked through.
- Drain any excess grease.
- Add the rice, diced tomatoes, corn, bell pepper, beef broth, onion powder, garlic powder, salt, and pepper to the pot. Stir well to combine.
- Secure the lid and set the Instant Pot to pressure cook on high for 8 minutes.
- After cooking, allow for a natural release for 5 minutes, then quickly release any remaining pressure.
- Open the lid and stir in the shredded cheese until melted. Serve warm.
Notes
For a vegetarian version, swap the ground beef for lentils. Experiment with different cheeses for varied flavors.
