A quick and creamy Cajun chicken pasta made effortlessly in an Instant Pot, blending bold spices and comforting flavors.


Ingredients

  • 1 lb chicken thighs, diced
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 8 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Salt and pepper to taste

Instructions

  1. Set Instant Pot to sauté mode and pour in olive oil.
  2. Add the diced chicken and cook until browned, about 5-7 minutes; sprinkle Cajun seasoning over the chicken.
  3. Stir in diced onion and minced garlic until onions are translucent, around 2-3 minutes.
  4. Add diced tomatoes and chicken broth, scraping up brown bits from the pot.
  5. Stir in rotini pasta, ensuring it’s submerged in the liquid.
  6. Close lid and set to manual high pressure for 5 minutes.
  7. Once finished, quick release the pressure; stir in heavy cream and cheese until melted and combined. Season with salt and pepper.
  8. Serve hot and enjoy your creamy Cajun chicken pasta.

Notes

For a thicker sauce, let the pasta sit in the pot after pressure cooking. Adjust the Cajun seasoning for desired spice level.
