- 1 lb chicken thighs, diced
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 8 oz rotini pasta
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or Monterey Jack)
- Salt and pepper to taste
Instructions
- Set Instant Pot to sauté mode and pour in olive oil.
- Add the diced chicken and cook until browned, about 5-7 minutes; sprinkle Cajun seasoning over the chicken.
- Stir in diced onion and minced garlic until onions are translucent, around 2-3 minutes.
- Add diced tomatoes and chicken broth, scraping up brown bits from the pot.
- Stir in rotini pasta, ensuring it’s submerged in the liquid.
- Close lid and set to manual high pressure for 5 minutes.
- Once finished, quick release the pressure; stir in heavy cream and cheese until melted and combined. Season with salt and pepper.
- Serve hot and enjoy your creamy Cajun chicken pasta.
Notes
For a thicker sauce, let the pasta sit in the pot after pressure cooking. Adjust the Cajun seasoning for desired spice level.
