Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 4 large russet potatoes, peeled and cut into thin fries
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Optional: fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill to medium-high heat and lightly oil the grates.
  2. Pat the cod fillets dry, then mix the olive oil, garlic powder, paprika, salt, pepper, and lemon juice in a bowl.
  3. Brush both sides of the cod fillets with the mixture and set aside.
  4. Grill the cod for 3-4 minutes per side, until opaque and flaky.
  5. Preheat your oven to 425°F (220°C).
  6. Toss the cut potatoes with vegetable oil, salt, pepper, and paprika until evenly coated.
  7. Spread the fries on a lined baking sheet and bake for 25-30 minutes, flipping halfway through.
  8. Serve grilled cod with a side of crispy fries, garnished with chopped parsley.

Notes

For a vegan version, substitute cod with marinated tofu. Adjust the spices to your preference for a milder or spicier taste.
