- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- 4 large russet potatoes, peeled and cut into thin fries
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Optional: fresh parsley, chopped (for garnish)
Instructions
- Preheat your grill to medium-high heat and lightly oil the grates.
- Pat the cod fillets dry, then mix the olive oil, garlic powder, paprika, salt, pepper, and lemon juice in a bowl.
- Brush both sides of the cod fillets with the mixture and set aside.
- Grill the cod for 3-4 minutes per side, until opaque and flaky.
- Preheat your oven to 425°F (220°C).
- Toss the cut potatoes with vegetable oil, salt, pepper, and paprika until evenly coated.
- Spread the fries on a lined baking sheet and bake for 25-30 minutes, flipping halfway through.
- Serve grilled cod with a side of crispy fries, garnished with chopped parsley.
Notes
For a vegan version, substitute cod with marinated tofu. Adjust the spices to your preference for a milder or spicier taste.
