Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup feta cheese, crumbled
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 lemon, sliced (for serving)

Instructions

1. In a medium bowl, whisk together honey, olive oil, red wine vinegar, garlic, oregano, red pepper flakes, salt, and pepper. Taste and adjust seasoning as needed.

2. Place chicken breasts in a resealable bag or shallow dish. Pour marinade over the chicken and coat evenly. Seal or cover and refrigerate for at least 30 minutes, up to 4 hours.

3. In a small bowl, mix feta cheese with a drizzle of olive oil, salt, and pepper. Set aside.

4. Preheat oven to 400°F (200°C). Remove chicken from marinade and discard remaining liquid. Place chicken in a baking dish.

5. Spoon feta mixture evenly over each piece of chicken.

6. Bake for 25–30 minutes, or until chicken reaches 165°F (75°C) and feta is golden. Broil for 2–3 minutes for extra color.

7. Let chicken rest 5 minutes before serving. Garnish with fresh parsley and lemon slices, then drizzle with pan juices.

Notes

Marinate chicken longer for richer flavor.

Grilling the chicken adds a smoky touch.

Try goat cheese or sharp cheddar instead of feta for a twist.

Serve with roasted veggies, rice, or salad for a complete meal.
