- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- Juice of 2 limes
- Zest of 1 lime
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- Lime wedges, for serving
Instructions
- In a mixing bowl, combine honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Whisk until well mixed to create the marinade.
- Place the chicken breasts in a resealable plastic bag or shallow dish, pour the marinade over them, seal the bag, and chill in the refrigerator for at least 30 minutes or up to 2 hours.
- Rinse jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the chicken broth and bring to a boil. Stir in the rice, cover, and simmer for about 15 minutes, or until tender and fluffy.
- Preheat your grill or stovetop grill pan over medium-high heat. Remove chicken from the marinade and grill for about 6-7 minutes on each side, or until cooked through.
- In a bowl, combine diced avocado, chopped red onion, fresh cilantro, and olive oil. Gently mix to combine.
- On each plate, layer a serving of jasmine rice, top with sliced grilled chicken, and then add the avocado mixture on top.
- Serve with lime wedges and additional cilantro for garnish.
Notes
Marinate chicken for up to 2 hours for better flavor. Use fresh, ripe avocados for the best texture.
