Description

A vibrant and flavor-packed dish combining honey, lime, and tender chicken layered atop fluffy avocado rice, perfect for gatherings.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • Juice of 2 limes
  • Zest of 1 lime
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • Lime wedges, for serving

Instructions

  1. In a mixing bowl, combine honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Whisk until well mixed to create the marinade.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish, pour the marinade over them, seal the bag, and chill in the refrigerator for at least 30 minutes or up to 2 hours.
  3. Rinse jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the chicken broth and bring to a boil. Stir in the rice, cover, and simmer for about 15 minutes, or until tender and fluffy.
  4. Preheat your grill or stovetop grill pan over medium-high heat. Remove chicken from the marinade and grill for about 6-7 minutes on each side, or until cooked through.
  5. In a bowl, combine diced avocado, chopped red onion, fresh cilantro, and olive oil. Gently mix to combine.
  6. On each plate, layer a serving of jasmine rice, top with sliced grilled chicken, and then add the avocado mixture on top.
  7. Serve with lime wedges and additional cilantro for garnish.

Notes

Marinate chicken for up to 2 hours for better flavor. Use fresh, ripe avocados for the best texture.
