- 14 ounces chicken or turkey sausage, sliced into 1/2-inch rounds
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 2 cups broccoli florets, cut into 1/2-inch pieces
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 1 tablespoon apple cider vinegar
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons fresh parsley, finely minced
Instructions
- Preheat your oven to 400°F.
- Line a sheet pan with parchment paper or lightly coat it with nonstick spray.
- Spread out the sliced sausage, diced sweet potatoes, and broccoli florets in an even layer on the prepared sheet pan.
- In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant and golden.
- Stir in honey, soy sauce, apple cider vinegar, and season with salt and black pepper. Let it simmer for 2-3 minutes, stirring occasionally.
- Pour the honey garlic glaze evenly over the sausage, sweet potatoes, and broccoli. Toss everything together until well coated.
- Roast in the oven for 25-30 minutes, stirring halfway through.
- Once out of the oven, sprinkle with freshly minced parsley before serving.
Notes
For a vegan version, substitute chicken sausage with plant-based sausage. You can also add red pepper flakes for a spicy kick.
