Description

A vibrant sheet pan dish featuring chicken sausage, sweet potatoes, and broccoli, all coated in a delicious honey garlic glaze.


Ingredients

  • 14 ounces chicken or turkey sausage, sliced into 1/2-inch rounds
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 2 cups broccoli florets, cut into 1/2-inch pieces
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley, finely minced

Instructions

  1. Preheat your oven to 400°F.
  2. Line a sheet pan with parchment paper or lightly coat it with nonstick spray.
  3. Spread out the sliced sausage, diced sweet potatoes, and broccoli florets in an even layer on the prepared sheet pan.
  4. In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant and golden.
  5. Stir in honey, soy sauce, apple cider vinegar, and season with salt and black pepper. Let it simmer for 2-3 minutes, stirring occasionally.
  6. Pour the honey garlic glaze evenly over the sausage, sweet potatoes, and broccoli. Toss everything together until well coated.
  7. Roast in the oven for 25-30 minutes, stirring halfway through.
  8. Once out of the oven, sprinkle with freshly minced parsley before serving.

Notes

For a vegan version, substitute chicken sausage with plant-based sausage. You can also add red pepper flakes for a spicy kick.
