Description

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 1/4 cup honey
  • 1 cup buttermilk
  • 2 eggs

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a mini muffin tin.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until combined.
  3. In a separate bowl, mix together the melted butter, honey, buttermilk, and eggs until blended.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted comes out clean.
  7. Cool in the tin for a few minutes before transferring to a wire rack.
