- 2 tablespoons milk

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, and kosher salt. Set aside.
- In a large mixing bowl, beat the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
- Add the creamy peanut butter, egg, and vanilla extract, mixing until fully combined.
- Gradually incorporate the flour mixture until just combined. Don’t overmix!
- Roll tablespoon-sized balls of dough in sugar, placing them on the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten each ball with a fork, creating a criss-cross pattern.
- Bake for 10-12 minutes, or until slightly golden. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack.
- In a separate bowl, beat the softened butter with the creamy peanut butter until smooth for the filling.
- Gradually add the powdered sugar, mixing well after each addition.
- Pour in the milk and vanilla extract, blending until creamy and spreadable.
- Once your cookies are completely cooled, spread a generous dollop of filling on the flat side of one cookie and sandwich it with another.
Notes
Use natural peanut butter for a more wholesome taste. Allow cookies to cool completely before filling to prevent the filling from melting.
