Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup light brown sugar
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup sugar (for rolling cookie dough)
  • 1/4 cup unsalted butter (for filling, softened)
  • 1/2 cup creamy peanut butter (for filling)
  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and kosher salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add the creamy peanut butter, egg, and vanilla extract, mixing until fully combined.
  5. Gradually incorporate the flour mixture until just combined. Don’t overmix!
  6. Roll tablespoon-sized balls of dough in sugar, placing them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Gently flatten each ball with a fork, creating a criss-cross pattern.
  8. Bake for 10-12 minutes, or until slightly golden. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  9. In a separate bowl, beat the softened butter with the creamy peanut butter until smooth for the filling.
  10. Gradually add the powdered sugar, mixing well after each addition.
  11. Pour in the milk and vanilla extract, blending until creamy and spreadable.
  12. Once your cookies are completely cooled, spread a generous dollop of filling on the flat side of one cookie and sandwich it with another.

Notes

Use natural peanut butter for a more wholesome taste. Allow cookies to cool completely before filling to prevent the filling from melting.
