Description

A hearty Italian dish featuring tender chicken, creamy sauce, and fresh spinach, perfect for chilly evenings.

Ingredients

Scale
  • 1 lb chicken breast
  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 1 cup spinach
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breast in the crockpot.
  2. Pour in the chicken broth, diced tomatoes, spinach, garlic, Italian seasoning, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender.
  4. Carefully remove the chicken, shred it using two forks, and return it to the crockpot.
  5. Stir in the orzo and heavy cream, mixing until combined.
  6. Cook for an additional 30 minutes on high, or until the orzo is cooked through and tender.
  7. Fold in the Parmesan cheese before serving, letting it melt into a creamy coating.

Notes

For best results, ensure you cook the orzo until al dente to prevent mushiness. Add a splash of lemon juice before serving for extra flavor.
