Ingredients

- 2 cups cooked brown rice
- 1 cup chicken breast, cooked and diced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add the mixed vegetables and cook until tender, about 3-4 minutes.
- Push the vegetables to one side of the skillet, crack the eggs on the other side, and scramble them until fully cooked.
- Add the cooked chicken and rice to the skillet, mixing everything together.
- Pour the soy sauce over the rice and stir well.
- Season with salt and pepper to taste.
- Stir in the sliced green onions before serving.
Notes
Use leftover rice for the best texture and ensure to not overcook the vegetables.
