Description

A quick and satisfying high-protein meal featuring savory chicken, vibrant vegetables, and flavorful soy sauce, all cooked in one skillet.


Ingredients

Scale
  • 2 cups cooked brown rice
  • 1 cup chicken breast, cooked and diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add the mixed vegetables and cook until tender, about 3-4 minutes.
  3. Push the vegetables to one side of the skillet, crack the eggs on the other side, and scramble them until fully cooked.
  4. Add the cooked chicken and rice to the skillet, mixing everything together.
  5. Pour the soy sauce over the rice and stir well.
  6. Season with salt and pepper to taste.
  7. Stir in the sliced green onions before serving.

Notes

Use leftover rice for the best texture and ensure to not overcook the vegetables.
