Ingredients

Scale
  • 4 cups cooked chicken, shredded
  • 2 cups cooked rice (white or brown)
  • 1 can cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 ½ cups shredded cheese (cheddar or your favorite variety)

  5. Sprinkle the reserved cheese on top, followed by the crushed crackers or breadcrumbs.
  6. If desired, drizzle melted butter over the top.

  8. Let it cool for a few minutes before serving.

Notes

This casserole is great for meal prep and can be assembled ahead of time. Consider substituting chicken with chickpeas for a creamy vegan option.
