- 1 lb lean ground beef
- 1 onion, chopped
- 2 tsp dried herbs (such as thyme or rosemary)
- 4 cups beef broth
- 1 cup tomato sauce
- 2 potatoes, diced
- 2 carrots, sliced
- 1 cup mushrooms, sliced
Instructions
- In a large pot, brown the lean ground beef along with the chopped onion over medium heat until cooked through.
- Sprinkle in the dried herbs and cook for an additional minute.
- Pour in the beef broth and add the tomato sauce, then bring to a gentle simmer.
- Add the diced potatoes, sliced carrots, and mushrooms to the pot, stirring well to combine.
- If using a pressure cooker, secure the lid and cook on high for about 10 minutes. For a slow cooker, cover and let it cook on low for 6-8 hours until the vegetables are tender.
- Adjust seasoning to your preference, serve hot, and enjoy.
Notes
For a spicier version, add red pepper flakes. It can also be made vegan by using lentils and vegetable broth.
