Ingredients

  • 1 lb lean ground beef
  • 1 onion, chopped
  • 2 tsp dried herbs (such as thyme or rosemary)
  • 4 cups beef broth
  • 1 cup tomato sauce
  • 2 potatoes, diced
  • 2 carrots, sliced
  • 1 cup mushrooms, sliced

Instructions

  1. In a large pot, brown the lean ground beef along with the chopped onion over medium heat until cooked through.
  2. Sprinkle in the dried herbs and cook for an additional minute.
  3. Pour in the beef broth and add the tomato sauce, then bring to a gentle simmer.
  4. Add the diced potatoes, sliced carrots, and mushrooms to the pot, stirring well to combine.
  5. If using a pressure cooker, secure the lid and cook on high for about 10 minutes. For a slow cooker, cover and let it cook on low for 6-8 hours until the vegetables are tender.
  6. Adjust seasoning to your preference, serve hot, and enjoy.

Notes

For a spicier version, add red pepper flakes. It can also be made vegan by using lentils and vegetable broth.
