  • 1 medium yellow onion; diced
  • 4 tsp. garlic; minced
  • 1 lb. ground turkey
  • 1 Tbsp. brown sugar
  • 2 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup tomato paste
  • 4 cups beef broth (low-sodium)
  • 1 (28-ounce) can fire-roasted crushed tomatoes
  • 1 (15-ounce) can kidney beans; rinsed and drained
  • 1 (15-ounce) can black beans; rinsed and drained
  • 1 (15-ounce) can pinto beans; rinsed and drained
  • Sour cream (for serving)
  • Jalapeños; sliced (for serving)
  • Shredded cheddar cheese (for serving)
  • Lime wedges (for serving)

Instructions

  1. In a Dutch oven or large pot, heat the olive oil over medium-high heat. Add the diced onions and minced garlic; sauté for 3–4 minutes until the onions become translucent and fragrant.
  2. Stir in the ground turkey, breaking it up as it cooks. Continue to cook for about 5–7 minutes until the meat is fully browned and no longer pink.
  3. Mix in the brown sugar, chili powder, ground cumin, oregano, salt, black pepper, and tomato paste. Stir until everything is well combined and aromatic.
  4. Pour in the beef broth, crushed tomatoes, and all the rinsed beans. Make sure to scrape the bottom off the pot to incorporate all the lovely bits.
  5. Cover the pot and bring the chili to a boil. Once boiling, reduce the heat to low and let it simmer uncovered for 30 minutes. Stir occasionally to prevent sticking. If the chili thickens too much, add a little water to reach your desired consistency.
  6. After simmering, serve hot with your favorite toppings like sour cream, jalapeños, and a sprinkle of cheddar cheese. Enjoy every piping-hot bowl!
