Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup salsa verde
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cooked quinoa or rice
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Combine shredded chicken, salsa verde, black beans, corn, quinoa or rice, cumin, chili powder, salt, and pepper in a large mixing bowl. Mix well.
  3. Spread the mixture evenly in a greased casserole dish.
  4. Top with shredded cheese.
  5. Bake for 25-30 minutes or until heated through and cheese is bubbly and golden.
  6. Garnish with fresh cilantro before serving.

Notes

This casserole can be prepared a day in advance and stored in the refrigerator. Add cheese just before baking for optimal freshness.
