- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Combine shredded chicken, salsa verde, black beans, corn, quinoa or rice, cumin, chili powder, salt, and pepper in a large mixing bowl. Mix well.
- Spread the mixture evenly in a greased casserole dish.
- Top with shredded cheese.
- Bake for 25-30 minutes or until heated through and cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
