Ingredients

  • 1 lb lean ground turkey
  • 2 medium sweet potatoes, peeled and diced (about 2 cups)
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 2 teaspoons of olive oil over medium heat.
  2. Add the chopped onion and bell peppers into the skillet and sauté until softened (about 5 minutes).
  3. Stir in the ground turkey and cook until browned (approximately 6-8 minutes).
  4. Add the diced sweet potatoes, cumin, paprika, salt, and pepper, mixing thoroughly.
  5. Cover and cook on medium-low for 15-20 minutes until the sweet potatoes are tender, stirring occasionally.
  6. In the last two minutes, stir in the minced garlic.
  7. Serve warm, garnished with fresh herbs or lime juice if desired.
