- 2 medium sweet potatoes, peeled and diced (about 2 cups)
- 1 cup bell peppers, chopped (mixed colors)
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 tsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large skillet, heat 2 teaspoons of olive oil over medium heat.
- Add the chopped onion and bell peppers into the skillet and sauté until softened (about 5 minutes).
- Stir in the ground turkey and cook until browned (approximately 6-8 minutes).
- Add the diced sweet potatoes, cumin, paprika, salt, and pepper, mixing thoroughly.
- Cover and cook on medium-low for 15-20 minutes until the sweet potatoes are tender, stirring occasionally.
- In the last two minutes, stir in the minced garlic.
- Serve warm, garnished with fresh herbs or lime juice if desired.
