Description

A cozy and nourishing dish combining ground turkey and sweet potatoes, perfect for chilly evenings.


Ingredients

Scale
  • 1 lb ground turkey
  • 2 medium sweet potatoes
  • 2 small zucchini
  • 2/3 cup shredded parmesan cheese
  • 1 1/2 tsp garlic powder
  • 1 tsp rosemary
  • 5 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Peel and chop the sweet potatoes into small cubes, then toss them with 2 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp rosemary, and salt and pepper in a large baking dish.
  3. Bake the sweet potatoes for about 30 minutes until tender and caramelized.
  4. Meanwhile, brown the ground turkey in a large pan with 1 tbsp olive oil, 1 tsp garlic powder, and 1/2 tsp rosemary until fully cooked, seasoning with salt and pepper.
  5. Chop the zucchini into slices and quarter them.
  6. Add the cooked ground turkey and chopped zucchini to the sweet potatoes and mix well.
  7. Return the dish to the oven and bake for an additional 10 minutes.
  8. After 10 minutes, drizzle with the remaining olive oil, mix again, and sprinkle the shredded parmesan cheese on top. Bake for another 10 minutes until golden brown and bubbly.
  9. Serve hot and enjoy!

Notes

For a spicy kick, add jalapeƱos or red pepper flakes. You can also substitute turkey for lentils for a vegetarian version.
