Ingredients

- 1 lb ground turkey
- 2 medium sweet potatoes
- 2 small zucchini
- 2/3 cup shredded parmesan cheese
- 1 1/2 tsp garlic powder
- 1 tsp rosemary
- 5 tbsp olive oil
- Salt & pepper to taste
Instructions
- Preheat the oven to 400 degrees F.
- Peel and chop the sweet potatoes into small cubes, then toss them with 2 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp rosemary, and salt and pepper in a large baking dish.
- Bake the sweet potatoes for about 30 minutes until tender and caramelized.
- Meanwhile, brown the ground turkey in a large pan with 1 tbsp olive oil, 1 tsp garlic powder, and 1/2 tsp rosemary until fully cooked, seasoning with salt and pepper.
- Chop the zucchini into slices and quarter them.
- Add the cooked ground turkey and chopped zucchini to the sweet potatoes and mix well.
- Return the dish to the oven and bake for an additional 10 minutes.
- After 10 minutes, drizzle with the remaining olive oil, mix again, and sprinkle the shredded parmesan cheese on top. Bake for another 10 minutes until golden brown and bubbly.
- Serve hot and enjoy!
Notes
For a spicy kick, add jalapeƱos or red pepper flakes. You can also substitute turkey for lentils for a vegetarian version.
