- 1 lb ground turkey
- 2 medium sweet potatoes
- 2 small zucchini
- 2/3 cup shredded parmesan cheese
- 1 1/2 tsp garlic powder
- 1 tsp rosemary
- 5 tbsp olive oil
- Salt & pepper, to taste
Instructions
- Preheat your oven to 400°F.
- Peel and chop the sweet potatoes into bite-sized cubes and place them in a baking dish.
- Toss sweet potatoes with 2 tbsp olive oil, 1/2 tsp of garlic powder, 1/2 tsp of rosemary, salt, and pepper.
- Bake the sweet potatoes for 30 minutes.
- While the sweet potatoes are baking, heat a pan over medium heat and add ground turkey with 1 tbsp olive oil, 1 tsp garlic powder, and 1/2 tsp rosemary. Cook until browned (7-10 minutes).
- Chop zucchinis into slices and quarter them.
- Once sweet potatoes are done, stir in cooked turkey and chopped zucchini.
- Bake the mixture for another 10 minutes.
- Drizzle in the remaining 2 tbsp olive oil and top with shredded parmesan cheese.
- Bake for another 10 minutes until cheese is golden and bubbly.
