Description

A comforting medley of ground turkey, sweet potatoes, and zucchini baked to perfection, perfect for family gatherings.


Ingredients

Scale
  • 1 lb ground turkey
  • 2 medium sweet potatoes
  • 2 small zucchini
  • 2/3 cup shredded parmesan cheese
  • 1 1/2 tsp garlic powder
  • 1 tsp rosemary
  • 5 tbsp olive oil
  • Salt & pepper, to taste

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and chop the sweet potatoes into bite-sized cubes and place them in a baking dish.
  3. Toss sweet potatoes with 2 tbsp olive oil, 1/2 tsp of garlic powder, 1/2 tsp of rosemary, salt, and pepper.
  4. Bake the sweet potatoes for 30 minutes.
  5. While the sweet potatoes are baking, heat a pan over medium heat and add ground turkey with 1 tbsp olive oil, 1 tsp garlic powder, and 1/2 tsp rosemary. Cook until browned (7-10 minutes).
  6. Chop zucchinis into slices and quarter them.
  7. Once sweet potatoes are done, stir in cooked turkey and chopped zucchini.
  8. Bake the mixture for another 10 minutes.
  9. Drizzle in the remaining 2 tbsp olive oil and top with shredded parmesan cheese.
  10. Bake for another 10 minutes until cheese is golden and bubbly.
