Ingredients

- 1 lb ground beef
- 1 tablespoon olive oil
- 1 cup bell peppers, diced
- 1 cup carrots, shredded
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 head of lettuce (butter or romaine), leaves separated
- Green onions, sliced (for garnish)
Instructions
- In a skillet, heat olive oil over medium heat.
- Add ground beef and cook until browned.
- Stir in diced bell peppers, shredded carrots, garlic, and ginger, cooking for another 4-5 minutes until vegetables are tender.
- In a small bowl, mix soy sauce, sesame oil, and rice vinegar. Pour the sauce into the skillet and stir to combine.
- Remove from heat and allow the mixture to cool slightly.
- Spoon the beef mixture into lettuce leaves and garnish with sliced green onions. Serve immediately!
