- 1 small head green cabbage, finely chopped
- 1 large cucumber, diced
- 4 green onions, chopped
- ½ cup fresh chives, chopped
- ½ cup fresh parsley, chopped
- ½ cup fresh basil leaves, chopped
- 1 avocado, diced (optional)
- ½ cup mayonnaise
- ½ cup plain Greek yogurt
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 2 tablespoons chopped chives
- 2 tablespoons chopped parsley
- 2 tablespoons chopped basil
- Salt and pepper, to taste
- 1–2 tablespoons water (to thin if needed)
Instructions
- Add all the chopped salad ingredients—cabbage, cucumber, green onions, chives, parsley, and basil—to a large mixing bowl.
- In a blender or food processor, combine mayonnaise, Greek yogurt, olive oil, lemon juice, minced garlic, chives, parsley, and basil. Blend until smooth and well combined.
- Drizzle the dressing over the salad ingredients in the bowl. Toss everything until the salad is evenly coated with the creamy dressing.
- Serve immediately for maximum crunch, or refrigerate for about 30 minutes to let the flavors meld.
Notes
For a fresh taste, chill the dressing beforehand. Customize with proteins or grains for a heartier meal.
