Ingredients

  • 1 small head green cabbage, finely chopped
  • 1 large cucumber, diced
  • 4 green onions, chopped
  • ½ cup fresh chives, chopped
  • ½ cup fresh parsley, chopped
  • ½ cup fresh basil leaves, chopped
  • 1 avocado, diced (optional)
  • ½ cup mayonnaise
  • ½ cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons chopped chives
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped basil
  • Salt and pepper, to taste
  • 12 tablespoons water (to thin if needed)

Instructions

  1. Add all the chopped salad ingredients—cabbage, cucumber, green onions, chives, parsley, and basil—to a large mixing bowl.
  2. In a blender or food processor, combine mayonnaise, Greek yogurt, olive oil, lemon juice, minced garlic, chives, parsley, and basil. Blend until smooth and well combined.
  3. Drizzle the dressing over the salad ingredients in the bowl. Toss everything until the salad is evenly coated with the creamy dressing.
  4. Serve immediately for maximum crunch, or refrigerate for about 30 minutes to let the flavors meld.
