Instructions
- Preheat the oven to 400°F (200°C).
- Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a large mixing bowl.
- Add the chicken thighs and potatoes to the bowl, tossing to coat them evenly with the marinade.
- Place the chicken and potatoes in a baking dish, arranging the potatoes around the chicken.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are tender.

Notes
For extra-crisp potatoes, place them cut-side down and ensure they have enough space in the baking dish. Pat the chicken skin dry before marinating for better crisping.
