Description

Ingredients

  • 3 to 4 pounds chuck roast
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 onion, chopped
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. Generously season the chuck roast with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the meat on all sides until golden brown.
  2. In the same skillet, sauté chopped onion, carrots, and celery until softened, about 5 minutes. Add minced garlic and cook for another minute.
  3. Place the seared roast in a slow cooker and add the sautéed vegetables, beef broth, Worcestershire sauce, thyme, and bay leaves. Mix well.
  4. Cover and cook on low for 8 hours or on high for 4-5 hours until the meat is tender and easily pulls apart.
  5. If desired, mix cornstarch with a bit of water and stir it into the pot for the last 30 minutes of cooking to thicken the sauce.

Notes

For best flavor, don’t lift the lid while cooking. Leftovers can be used in sandwiches or soups.
