- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 4 tablespoons olive oil
- 5 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
- 1 teaspoon paprika
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley leaves (optional for garnish)
Instructions
- In a large bowl, combine olive oil, garlic, thyme, rosemary, oregano, paprika, salt, and black pepper. Stir until well mixed.
- Add the chicken breasts and baby potatoes to the bowl. Toss gently to ensure they are evenly coated with the seasoning mixture.
- Place the seasoned chicken and potatoes into the slow cooker, arranging them in an even layer.
- Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the chicken is cooked through and the potatoes are tender.
- About 30 minutes before serving, sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.
- Cover and let the Parmesan melt and infuse into the dish during the remaining cooking time.
- Once cooked, remove from the slow cooker and transfer to a serving platter.
- Garnish with fresh parsley, if desired. Serve hot and enjoy!
Notes
For a richer flavor, consider searing the chicken before adding to the slow cooker. Adjust seasoning at the end for optimal taste.
