- 4 pieces boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 0.5 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley, to taste
Instructions
- Pat chicken breasts dry and rub with olive oil, half the minced garlic, salt, and pepper.
- Toss halved baby potatoes with remaining garlic, Italian seasoning, and a pinch of salt.
- Pour chicken broth into the bottom of the slow cooker. Place seasoned potatoes in an even layer, then nestle chicken breasts on top.
- Cover and cook on low for 4–5 hours, or until chicken reaches 165°F and potatoes are fork-tender.
- In the last 15 minutes of cooking, sprinkle grated Parmesan and red pepper flakes over everything, cover, and let it melt.
- Transfer to a serving platter, spoon braising liquid over, and garnish with parsley before serving.
Notes
For added richness, consider using skin-on chicken. Adjust seasoning to taste based on dietary needs.
