Description

A cozy and hearty dish featuring succulent chicken and tender baby potatoes in a rich garlic Parmesan sauce, cooked slowly in a crockpot for maximum flavor.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil

Instructions

  1. Wash and cut the baby potatoes in half.
  2. Mince the garlic finely.
  3. Drizzle olive oil over the chicken breasts and season with Italian seasoning, salt, pepper, and red pepper flakes if desired.
  4. Layer the halved potatoes at the bottom of the crockpot.
  5. Place the seasoned chicken on top of the potatoes.
  6. Pour chicken broth over everything, then sprinkle minced garlic and Parmesan cheese on top.
  7. Cook in the crockpot on low for 6-7 hours or on high for 3-4 hours until the chicken is tender.

Notes

Enhance flavors by adjusting seasonings or adding vegetables like carrots or green beans! This dish is also great with a splash of lemon before serving.
