A comforting garlic parmesan crockpot chicken and potatoes dish that brings families together with rich flavors and tender textures.

- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Wash the baby potatoes and cut them in half.
- Mince the garlic cloves and set them aside.
- Drizzle the chicken breasts with olive oil and rub them with Italian seasoning, salt, black pepper, and red pepper flakes.
- Layer the halved potatoes at the bottom of your crockpot.
- Place the seasoned chicken breasts on top of the potatoes.
- Pour the chicken broth over the contents of the crockpot.
- S sprinkle the minced garlic over the chicken, followed by a layer of grated parmesan cheese.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- Once cooked, remove the chicken and potatoes and dress them with the sauce left in the crockpot.
- Garnish with fresh parsley if desired and serve warm.
Notes
Adjust cooking time based on the size of chicken breasts. For added cheesiness, sprinkle more parmesan during the last 30 minutes of cooking.
