Description

A creamy and flavorful dish featuring chicken and potatoes slow-cooked to perfection in a rich garlic Parmesan sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs Yukon gold or red potatoes, cut into 1-inch pieces
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Chop the chicken into bite-sized chunks and slice the potatoes into 1-inch pieces.
  2. If desired, brown the chicken in a pan for extra flavor.
  3. Transfer the chicken and potatoes to the slow cooker, spreading them evenly.
  4. In a bowl, mix heavy cream, Parmesan, garlic, Italian seasoning, paprika, salt, and pepper.
  5. Pour the mixture over the chicken and potatoes in the crockpot.
  6. Cover and cook on low for 6-7 hours or high for 3.5-4 hours.
  7. Stir gently before serving and garnish with fresh parsley.

Notes

For a lighter version, substitute half-and-half for the heavy cream. This dish is naturally gluten-free.
