A delightful twist on a classic, this Garlic Parmesan Chicken Meatloaf blends the lightness of ground chicken with savory Parmesan and aromatic garlic for a comforting and flavorful dish.


Ingredients

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté diced onions until soft and translucent, approximately 5 minutes.
  3. In a large bowl, mix together the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese until well combined.
  4. Transfer the mixture to the greased baking dish, shaping it into a loaf form.
  5. Sprinkle the remaining Parmesan cheese on top for an extra cheesy crust.
  6. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Let rest for 10 minutes before slicing.
