- 1 lb ground chicken
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (plain or Italian-seasoned)
- 2 large eggs
- 1 medium onion, diced
- 2 tbsp soy sauce
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
- In a skillet over medium heat, sauté diced onions until soft and translucent, approximately 5 minutes.
- In a large bowl, mix together the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese until well combined.
- Transfer the mixture to the greased baking dish, shaping it into a loaf form.
- Sprinkle the remaining Parmesan cheese on top for an extra cheesy crust.
- Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Let rest for 10 minutes before slicing.
Notes
Letting the meatloaf rest before slicing helps keep it juicy. For a crispy top, consider broiling for the last 2-3 minutes of baking.
