Description
This garlic butter steak bites and potatoes skillet is the perfect quick dinner. Tender steak cubes seared in garlic butter with golden potatoes make an easy, hearty one-pan meal ready in under 30 minutes.
Ingredients
- ¼ cup ghee or butter, divided
- 1 tablespoon olive oil
- 1 lb Yukon gold potatoes, cut into ½ inch cubes
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon sea salt, plus more to taste
- ¼ teaspoon ground black pepper, plus more to taste
- 1 ¼ lb sirloin steak, cut into ½ inch cubes
Instructions
1. Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons ghee.
2. Add cubed potatoes, sprinkle with garlic, thyme, oregano, salt, and pepper. Cook 2–3 minutes before stirring. Continue 8–10 minutes until golden and tender, stirring every 1–2 minutes. Remove and set aside.
3. Increase heat to medium-high. Add remaining ghee. Once melted, add steak cubes, season, and let sear 2 minutes before stirring. Cook another 1–2 minutes until golden brown.
4. Return potatoes to pan, toss together, adjust seasoning, and top with parsley. Serve immediately.
Notes
You can substitute red or fingerling potatoes.
Pat steak dry for a better sear.
Don’t stir steak too early—let it brown first.
