- 2 cups Cooked Chicken, shredded
- 1 (1 oz) packet Taco Seasoning
- ½ cup Water
- 1 (15 oz) can Black Beans, rinsed and drained
- 1 (15 oz) can Corn, drained
- 1 (10 oz) can Diced Tomatoes with Green Chiles, undrained
- 1 (8 oz) container Sour Cream
- 1 (8 oz) block Cream Cheese, softened
- 1 cup Chunky Salsa
- ½ cup Chicken Broth
- 1 tsp Ground Cumin
- ½ tsp Garlic Powder
- 1 (10 oz) bag Tortilla Chips, crushed
- 3 cups Shredded Mexican Cheese Blend
- Non-stick Cooking Spray
- Toppings: Shredded Lettuce, Diced Fresh Tomatoes, Sliced Jalapeños, Sliced Black Olives, Fresh Cilantro, Avocado Slices or Guacamole, Extra Sour Cream, Lime Wedges
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine shredded chicken, taco seasoning, and water. Toss until the chicken is coated evenly. Add black beans, corn, and diced tomatoes, stirring gently to combine.
- In a separate bowl, blend cream cheese and sour cream until smooth. Whisk in salsa, chicken broth, cumin, and garlic powder until fully incorporated.
- Spray a 9×13 inch baking dish with cooking spray and layer half of the crushed tortilla chips at the bottom. Spoon the chicken mixture over the chips, pressing down to create a firm layer.
- Pour the creamy sauce over the chicken mixture and smooth it out evenly. Top with 2 cups of shredded cheese, then sprinkle the remaining tortilla chips on top, followed by the last cup of cheese.
- Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and golden.
- Allow the casserole to rest for 10 minutes before serving. Offer an assortment of toppings for guests to customize their plates.
