Description

Delicious and moist sugar-free zucchini bread made with whole wheat flour and sweetened with applesauce and maple syrup.


Ingredients

  • 2 cups grated zucchini
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup or honey
  • 1/2 cup almond flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine the grated zucchini, applesauce, maple syrup (or honey), and vanilla extract.
  3. In another bowl, sift together the almond flour, whole wheat flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet zucchini mixture, stirring until just combined. Fold in optional chopped nuts or chocolate chips.
  5. Pour the batter into the prepared loaf pan, smoothing the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the loaf cool in the pan for 10 minutes before transferring it onto a wire rack to cool completely.

Notes

For optimal moisture, squeeze out excess water from grated zucchini and avoid overmixing the batter.
