Delicious and moist sugar-free zucchini bread made with whole wheat flour and sweetened with applesauce and maple syrup.

- 2 cups grated zucchini
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup or honey
- 1/2 cup almond flour
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large mixing bowl, combine the grated zucchini, applesauce, maple syrup (or honey), and vanilla extract.
- In another bowl, sift together the almond flour, whole wheat flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet zucchini mixture, stirring until just combined. Fold in optional chopped nuts or chocolate chips.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring it onto a wire rack to cool completely.
Notes
For optimal moisture, squeeze out excess water from grated zucchini and avoid overmixing the batter.
