  • 1 teaspoon turmeric powder

  • 1/2 teaspoon black pepper (Freshly ground)
  • 4 cups vegetable broth (Homemade or low-sodium)
  • 1 cup coconut milk (Stir in at the end)
  • 1/4 cup fresh cilantro (Chopped)
  • 1 unit lime wedges (Optional)

Instructions

  1. In a large pot over medium heat, add a splash of oil. Once hot, toss in the finely chopped onion and sauté until translucent (about 5 minutes).
  2. Add the minced garlic and grated ginger, cooking until fragrant (about 1 minute).
  3. Stir in the diced carrots and cook for another 3-4 minutes, letting them soften slightly.
  4. Sprinkle in the curry powder, ground cumin, turmeric, salt, and black pepper. Stir well to coat the veggies and toast the spices for about 1-2 minutes.
  5. Add the red lentils to the pot, followed by the vegetable broth. Bring to a gentle boil, then reduce the heat to a simmer, covering the pot with a lid.
  6. Let your soup simmer for about 20 minutes, stirring occasionally, until the lentils are tender and fully cooked.
  7. Remove the pot from the heat, stir in the coconut milk, and adjust seasoning to taste.
  8. Ladle the soup into bowls, sprinkle with chopped fresh cilantro, and serve with lime wedges for a zesty finish.
