Description
Easy Marry Me Shrimp is a creamy, flavorful shrimp recipe made with sun-dried tomatoes, spinach, garlic, and parmesan in a light, rich sauce. Ready in just 20 minutes, this dish is perfect for weeknight dinners or special occasions.
Ingredients
1½ lbs shrimp, peeled, deveined, and rinsed
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon Italian herb blend
1 tablespoon butter
1 tablespoon olive oil
1 small onion, diced
5 cloves garlic, minced
1/2 cup white wine
5 ounces sun-dried tomatoes, drained and sliced
1⅓ cups half-and-half (or heavy cream for a richer sauce)
Salt and pepper, to taste
1/2 cup grated parmesan cheese
1 large handful baby spinach
Instructions
1. Pat shrimp dry with paper towels. Season all over with salt, paprika, and Italian herbs.
2. In a large skillet, heat butter and olive oil over medium-high heat. Add shrimp and cook for 1–2 minutes on each side until lightly golden. Remove from pan and set aside.
3. In the same skillet, add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds.
4. Pour in white wine and add sun-dried tomatoes. Stir for 1 minute to blend flavors.
5. Add half-and-half, salt, pepper, and parmesan cheese. Simmer for 2–3 minutes to slightly thicken the sauce.
6. Add spinach and cooked shrimp back into the skillet. Stir until shrimp are coated and spinach is wilted.
7. Serve hot over rice, pasta, or mashed potatoes.
Notes
For the best flavor, use fresh shrimp and sun-dried tomatoes packed in oil. If you prefer a thicker sauce, simmer longer before adding spinach. You can replace white wine with chicken broth. Store leftovers in the refrigerator for up to 2 days and reheat gently on the stove.
