Ingredients

- 1 lb ground beef
- 1 can diced tomatoes
- 2 cups beef broth
- 2 cups potatoes, diced
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot or Instant Pot, brown the ground beef over medium heat, breaking it up with a spoon, until no longer pink; drain excess fat.
- Add diced onion and minced garlic; sauté until the onion is tender and translucent.
- Stir in the chopped carrots, celery, and potatoes.
- Pour in diced tomatoes, beef broth, Italian seasoning, and season with salt and pepper to taste.
- If using an Instant Pot, seal the lid and set to high pressure for 10 minutes. For the stove, simmer the soup for 20-25 minutes until the veggies are tender.
- After cooking, allow the Instant Pot to naturally release pressure for 10 minutes, then quick-release any remaining pressure.
- Serve hot, garnished with fresh parsley if desired.
Notes
Add a sprinkle of cheese or a dollop of sour cream for extra creaminess.
