Description

A comforting and simple soup that combines zesty Italian sausage with creamy cheese tortellini, perfect for busy days.


Ingredients

  • 1 lb Italian sausage, browned, drained, and chopped
  • 1 15 oz can Italian diced tomatoes
  • 4 cups vegetable or chicken broth
  • 32 oz container cream cheese, cubed
  • 1 20 oz bag frozen cheese tortellini
  • 34 cups fresh spinach
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp Italian seasoning
  • ½ tbsp black pepper

Instructions

  1. In a large slow cooker, combine the browned Italian sausage, vegetable or chicken broth, and diced tomatoes. Stir well.
  2. Add the cubed cream cheese and sprinkle in the garlic powder, onion powder, Italian seasoning, and black pepper. Mix thoroughly.
  3. Cover the slow cooker and set it to high for 3-4 hours or low for 6-8 hours.
  4. After cooking, stir in the frozen cheese tortellini and fresh spinach. Cook for an additional 30 minutes (on high) or until the pasta is tender.
  5. Once everything is heated through, serve immediately.

Notes

For extra flavor, use fire-roasted diced tomatoes and consider adding a dash of hot sauce for a spicy twist.
