- 4 pieces Boneless, skinless chicken breasts
- 1 pound Baby potatoes, halved
- 1 cup Carrots, sliced
- 1 medium Onion, chopped
- 3 cloves Garlic, minced
- 1 cup Chicken broth
- 2 teaspoons Dried thyme
- 2 teaspoons Dried rosemary
- to taste Salt
- to taste Pepper
- 2 tablespoons Olive oil
- to taste Fresh parsley, chopped (for garnish)
Instructions
- Rinse the chicken breasts under cold water and pat them dry. Season with salt, pepper, thyme, and rosemary.
- Halve the baby potatoes and place them in a large bowl.
- Add sliced carrots, chopped onion, and minced garlic to the bowl with potatoes. Drizzle with olive oil and toss until well coated.
- Place the seasoned chicken breasts at the bottom of the crockpot. Layer the vegetable mixture on top.
- Pour the chicken broth over the ingredients in the crockpot.
- Cover the crockpot and set it to cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, garnish with freshly chopped parsley before serving.
Notes
Consider adding a squeeze of lemon juice just before serving for added freshness.
