Description

These Easy Breakfast Pastry Eggs combine buttery puff pastry, savory ham, melty Gruyère cheese, and baked eggs for a crisp, golden, and satisfying breakfast or brunch dish that’s as simple as it is elegant.


Ingredients

  • 2 sheets puff pastry, thawed
  • 1 egg plus 1 teaspoon water (for egg wash)
  • 6 ounces Gruyère cheese, shredded
  • 8 slices Black Forest ham
  • 8 eggs
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • Chives, chopped (for garnish)

Instructions

1. Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.

2. Roll each puff pastry sheet into a square and cut into 4 even squares (8 total).

3. Place squares on baking sheets and poke holes in the center with a fork.

4. Brush each square with egg wash and sprinkle lightly with salt.

5. Top each square with one slice of ham.

6. Sprinkle Gruyère cheese around the edges, leaving the center open for the egg.

7. Bake for 10–15 minutes until the pastry edges puff and start turning golden.

8. Remove from oven and use a spoon to make a small well in the center.

9. Crack an egg into each well and season with salt and pepper.

10. Return to the oven and bake for another 10–15 minutes until egg whites are set.

11. Garnish with fresh chives and serve hot.

Notes

Use chilled puff pastry for maximum flakiness.

Do not overbake to keep yolks soft and creamy.

Substitute Gruyère with Swiss, cheddar, or Fontina for different flavor profiles.

Best enjoyed fresh, but can be stored in the fridge for up to 2 days and reheated in the oven at 350°F (175°C) for 5–7 minutes.
