Description

A comforting and flavorful asparagus soup that warms you from the inside out, perfect for sharing memories with loved ones.


Ingredients

  • 1.5 lbs asparagus, trimmed and cut into pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent and aromatic — about 3-4 minutes.
  2. Toss the chopped asparagus into the pot and stir for another 3 minutes until slightly tender and vibrant green.
  3. Pour in the vegetable broth and bring to a simmer. Let it cook for about 10 minutes until the asparagus is fully tender.
  4. Using an immersion blender, puree the soup until it reaches your desired smoothness. Alternatively, transfer in batches to a blender.
  5. Return the blended soup to the pot over low heat. Stir in the heavy cream, and season with salt and black pepper to your preference. Heat through for 2-3 minutes.
  6. Ladle the soup into bowls, and garnish with additional sautéed asparagus tips or a swirl of cream if desired.

Notes

Feel free to add a dash of lemon zest or top with crispy croutons for extra crunch! Adjust the consistency by adding more broth if too thick.
