A comforting and flavorful asparagus soup that warms you from the inside out, perfect for sharing memories with loved ones.
Ingredients

- 1.5 lbs asparagus, trimmed and cut into pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 0.5 cup heavy cream
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent and aromatic — about 3-4 minutes.
- Toss the chopped asparagus into the pot and stir for another 3 minutes until slightly tender and vibrant green.
- Pour in the vegetable broth and bring to a simmer. Let it cook for about 10 minutes until the asparagus is fully tender.
- Using an immersion blender, puree the soup until it reaches your desired smoothness. Alternatively, transfer in batches to a blender.
- Return the blended soup to the pot over low heat. Stir in the heavy cream, and season with salt and black pepper to your preference. Heat through for 2-3 minutes.
- Ladle the soup into bowls, and garnish with additional sautéed asparagus tips or a swirl of cream if desired.
Notes
Feel free to add a dash of lemon zest or top with crispy croutons for extra crunch! Adjust the consistency by adding more broth if too thick.
