Description

Buttery, tender Easter Cookies, perfect for gatherings and quiet afternoons, ready for colorful decoration.


Ingredients

  • 2 and 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened to room temperature
  • 3/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • Royal icing or easy cookie glaze icing
  • Gel food coloring
  • Sanding sugar sprinkles
  • Mini marshmallows, halved (for bunny tails)

Instructions

  1. Whisk the flour, baking powder, and salt together in a bowl.
  2. Beat butter and sugar together until smooth in a large bowl.
  3. Add egg, vanilla, and almond extract. Mix until combined.
  4. Gradually add dry ingredients to wet ingredients and mix until combined.
  5. Chill dough in the refrigerator for 1-2 hours.
  6. Preheat oven to 350°F (177°C). Roll out the dough to about 1/4-inch thickness.
  7. Cut into shapes and place on baking sheets.
  8. Bake for 11-12 minutes or until lightly browned.
  9. Cool cookies on racks before decorating.
  10. Prepare royal icing or glaze and decorate as desired, letting set between layers.

Notes

Chill dough to prevent spreading and ensure crisp cutter edges. Use parchment or silicone mats for even baking.
