- 1 cup lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 4 cups vegetable broth
- 1 can diced tomatoes
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Sauté the onion, carrots, and celery until they soften, about 5-7 minutes.
- Stir in the minced garlic, cumin, coriander, paprika, and cayenne pepper, cooking for another minute until fragrant.
- Add the lentils, vegetable broth, and diced tomatoes to the pot, stirring to combine all the ingredients.
- Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat, cover, and let it simmer for 30-40 minutes, or until the lentils are tender.
- Season with salt and pepper to taste, adjusting as needed.
- Before serving, sprinkle freshly chopped cilantro on top for a beautiful finish.
Notes
This soup can be made ahead of time and stored for up to three days in the fridge or frozen for three months. Reheat gently for best texture.
