- 8 pieces Corn Tortillas
- 2 cups Rotisserie Chicken, shredded and warmed
- 1/2 cup Salsa
- 1 packet Taco Seasoning
- 1 cup Corn, drained (canned or frozen)
- 1 can Black Beans, rinsed and drained
- 1 cup Cheese (Monterey Jack or Cheddar)
- 1/4 cup Fresh Cilantro, chopped
- 1/2 cup Tomatoes, diced
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- Arrange the corn tortillas in a single layer on the baking sheet and bake for 8-10 minutes or until crispy and golden.
- Shred the rotisserie chicken into bite-sized pieces, warming it in a pan if desired for extra flavor.
- Sprinkle taco seasoning over the shredded chicken and mix well to incorporate all the spices.
- In a bowl, combine the drained black beans and corn, then add diced tomatoes for a fresh burst of flavor.
- Once the tortillas are crispy, layer each with seasoned chicken, corn-black bean mixture, cheese, diced tomatoes, and a spoonful of salsa.
- Return to the oven for an additional 5 minutes until the cheese melts and everything is heated through.
