  • 8 pieces Corn Tortillas
  • 2 cups Rotisserie Chicken, shredded and warmed
  • 1/2 cup Salsa
  • 1 packet Taco Seasoning
  • 1 cup Corn, drained (canned or frozen)
  • 1 can Black Beans, rinsed and drained
  • 1 cup Cheese (Monterey Jack or Cheddar)
  • 1/4 cup Fresh Cilantro, chopped
  • 1/2 cup Tomatoes, diced

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Arrange the corn tortillas in a single layer on the baking sheet and bake for 8-10 minutes or until crispy and golden.
  3. Shred the rotisserie chicken into bite-sized pieces, warming it in a pan if desired for extra flavor.
  4. Sprinkle taco seasoning over the shredded chicken and mix well to incorporate all the spices.
  5. In a bowl, combine the drained black beans and corn, then add diced tomatoes for a fresh burst of flavor.
  6. Once the tortillas are crispy, layer each with seasoned chicken, corn-black bean mixture, cheese, diced tomatoes, and a spoonful of salsa.
  7. Return to the oven for an additional 5 minutes until the cheese melts and everything is heated through.
