- 1 cup tapioca flour
- 1 egg
- 1/2 cup milk
- 1 cup cheese (preferably grated parmesan or mozzarella)
- 1/4 teaspoon salt
- 1 tablespoon oil (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the tapioca flour and salt. Stir to distribute the salt evenly.
- In a separate bowl, whisk together the egg, milk, and oil until frothy.
- Pour the wet ingredients into the dry ingredients and mix well until there are no lumps.
- Add the grated cheese and combine until uniformly mixed.
- Grease a mini muffin tin and pour the batter into each cup, filling them about 3/4 full.
- Bake for 15-20 minutes or until the tops are lightly golden brown and a toothpick inserted comes out clean.
- Let cool slightly before serving and enjoy warm!
