Description

A comforting and flavorful chicken satay made effortlessly in a crockpot with a luscious peanut sauce.


Ingredients

  • 2 lbs chicken thighs or breasts
  • 1/4 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon curry powder
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 can coconut milk
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together peanut butter, soy sauce, honey, curry powder, garlic, ginger, coconut milk, and lime juice until well combined.
  2. Place the chicken in the crockpot and season with salt and pepper.
  3. Pour the sauce mixture over the chicken, coating it evenly.
  4. Cook on low for 360-480 minutes or on high for 180-240 minutes until the chicken is tender.
  5. Serve hot with rice or fresh vegetables, garnished with fresh herbs.

Notes

Marinating the chicken overnight in the sauce enhances the flavor. For a thicker sauce, simmer the sauce separately after cooking.
