Ingredients

- 2 lbs chicken thighs or breasts
- 1/4 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon curry powder
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 can coconut milk
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a bowl, mix together peanut butter, soy sauce, honey, curry powder, garlic, ginger, coconut milk, and lime juice until well combined.
- Place the chicken in the crockpot and season with salt and pepper.
- Pour the sauce mixture over the chicken, coating it evenly.
- Cook on low for 360-480 minutes or on high for 180-240 minutes until the chicken is tender.
- Serve hot with rice or fresh vegetables, garnished with fresh herbs.
Notes
Marinating the chicken overnight in the sauce enhances the flavor. For a thicker sauce, simmer the sauce separately after cooking.
