Description

Delicious low-carb roll ups filled with juicy beef, melted cheese, and vibrant vegetables, perfect for a comforting meal.


Ingredients

Scale
  • 1 lb thinly sliced ribeye or sirloin beef
  • 8 oz provolone cheese, sliced
  • 1 cup mixed bell peppers, chopped
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 low-carb tortillas

Instructions

  1. Slice the beef into thin strips and chop the bell peppers and onion.
  2. Heat the olive oil in a skillet over medium heat and sauté the chopped onions and bell peppers until softened, about 5-7 minutes.
  3. Increase to medium-high heat, add sliced beef, season with salt and pepper, and cook until browned, about 3-5 minutes.
  4. Lower the heat to low, place provolone slices over the beef mixture to melt.
  5. Spoon the beef and cheese mixture onto each tortilla and roll tightly, tucking in the sides.
  6. Return the roll-ups seam-side down to the skillet and cook until golden brown on all sides, approximately 3-4 minutes total.

Notes

Let roll ups rest for a couple of minutes before slicing. Store leftovers in an airtight container for up to 3 days.
