- 1 lb thinly sliced ribeye or sirloin beef
- 8 oz provolone cheese, sliced
- 1 cup mixed bell peppers, chopped
- 1 medium sweet onion, chopped
- 2 tbsp extra virgin olive oil
- 4 low-carb tortillas
Instructions
- Slice the beef into thin strips and chop the bell peppers and onion.
- Heat the olive oil in a skillet over medium heat and sauté the chopped onions and bell peppers until softened, about 5-7 minutes.
- Increase to medium-high heat, add sliced beef, season with salt and pepper, and cook until browned, about 3-5 minutes.
- Lower the heat to low, place provolone slices over the beef mixture to melt.
- Spoon the beef and cheese mixture onto each tortilla and roll tightly, tucking in the sides.
- Return the roll-ups seam-side down to the skillet and cook until golden brown on all sides, approximately 3-4 minutes total.
Notes
Let roll ups rest for a couple of minutes before slicing. Store leftovers in an airtight container for up to 3 days.
