Instructions
- Place the chicken breast in the bottom of your crockpot.
- Pour in the diced tomatoes, chicken broth, Italian seasoning, and season with salt and pepper.
- Secure the lid and cook on low for about 6-7 hours or until the chicken is completely cooked and falls apart easily.
- Remove the chicken and shred it using two forks.
- Stir in the orzo and heavy cream, ensuring everything is well combined, and return the shredded chicken back to the pot.
- Add the spinach and cook on high for an additional 30 minutes, or until the orzo is tender.
- Serve warm, garnished with freshly grated Parmesan cheese.
