Description
Juicy chicken breasts slow-cooked in sweet and smoky pineapple BBQ sauce, perfect over rice or in buns.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup barbecue sauce
- 1 cup pineapple chunks (fresh or canned, drained)
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt, to taste
- Pepper, to taste
- Chopped green onions, for garnish
Instructions
1. Place the chicken breasts in the bottom of the crockpot and season with salt and pepper.
2. In a medium bowl, mix barbecue sauce, pineapple chunks, soy sauce, garlic powder, and onion powder until smooth.
3. Pour the pineapple BBQ sauce mixture over the chicken, making sure each piece is well coated.
4. Cover and cook on low for 6–7 hours, or high for 3–4 hours, until the chicken is fork-tender.
5. Remove chicken from the crockpot, shred it with two forks, then return it to the pot. Stir until coated in sauce.
6. Serve hot, garnished with chopped green onions.
Notes
Thaw chicken before cooking if using frozen.
Double BBQ sauce and pineapple for extra juiciness.
Shred chicken while warm for best texture.
Adjust seasoning with extra soy or BBQ sauce if needed.
